SPANAKORIZO (Spinach and Rice)

4.5 pounds of spinach
1 cup oil
1 medium onion
1 tablespoon tomato paste diluted with 2 cups water
salt and pepper
1 cup rice
water as needed

Wash and clean the spinach thoroughly.

Cut each leaf in half or in thirds.

Heat the oil and fry the onion lightly. Toss in the spinach, stir until it wilts.

Add the tomato paste, salt and pepper.

Cover and cook over medium heat for about 45 mintues. (Add water if needed).

Bring to a boil.

Add the rice, stirring at first, and cover and cook until the rice is almost tender (for about 15 minutes).

Remove from the heat before all liquid is absorbed. Remove the lid, cover the pot with a clean towel and replace the lid. Let stand for about 10 minutes.

**you can also add fresh dill for flavour**

It's fast, healthy, economical! And as usual, it tastes even better the next day.
